Living in Happy Valley? You've more than likely heard of scones. Scones and honey butter are a staple in Utah. So light, fluffy, and slightly sweet, these are more than just a treat, they are a way of living!

Ingredients

For the Scones
  • 2 packages Quick Rise Yeast - or 4 1/2 tsp
  • 2/3 cup Warm Water
  • 2 cups Buttermilk
  • 1/2 cup Sugar - plus 1 Tbsp
  • 3 Tbsp Butter - unsalted, melted
  • 3 Tbsp Peanut Oil - or Canola Oil
  • 2 tsp Salt
  • 1 tsp Baking Powder
  • 8-9 cups Flour - all purpose
  • 3 large Eggs
  • Oil for frying
For the Honey Butter
  • 1/2 cup Butter - unsalted, at room temperature
  • 1/3 cup Powdered Sugar
  • 1/3 cup Honey
  • 1/2 tsp Salt

Instructions

For the Scones
  1. In a small bowl, add the yeast, 1 Tbsp sugar, and warm water. Let stand for 5 minutes until foamy.
  2. To a large mixing bowl of a stand mixer, add buttermilk, sugar, melted butter, oil and salt. Mix until completely dissolved. Add the baking powder and flour. Beat on low for about 30 seconds, scraping the sides periodically.
  3. Add the yeast mixture and beat for 3 minutes. Add the eggs and beat until fully incorporated. Add enough flour as needed to make a soft dough. It will pull away from the sides of the bowl but be somewhat sticky when touched with your hands.
  4. Transfer dough to a large bowl sprayed with non-stick spray. Cover with plastic wrap and a tea towel. Place in a warm draft-free place until dough has doubled in size. This may take about 1 hour depending on how warm it is.
  5. After dough has risen, sprinkle a small amount of flour on a clean, flat surface and turn the dough out. Roll out 1/4 inch thick. Using a sharp knife or pizza cutter, cut even rectangles. You should get about 24 pieces.
  6. Place each piece on a baking sheet lined with parchment paper, cover with a tea towel and let rise in a warm, draft-free space, about 30 minutes.
  7. In a large, cast iron skillet, or other heavy bottomed skillet, heat about 2 inches of oil to 350-375 degrees F. Use a candy thermometer.
  8. Carefully place the scones into the oil and fry for about 1-2 minutes per side.
  9. Remove from oil and place on cooling rake lined with paper towels.
  10. Serve warm with Honey Butter!
For the Honey Butter
  1. Add the softened butter to a bowl and mix with electric mixer until light and fluffy.
  2. Add the powdered sugar, honey and salt. Mix thoroughly.

Notes

When setting the dough aside to rise, it makes it easier and quicker if you have the option of using a dough proofing setting on your oven.


When cutting the dough into rectangles, you can also opt to roll them into a ball and flatten before frying.
