Fresh veggies, rosemary, and feta oven roasted to perfection to warm you on those long winter days. Served up fresh with grilled cheese. Delicious!

Ingredients

  • 1 (8 oz.) Feta block
  • 1 Red Pepper, sliced
  • 4 Roma Tomatoes, sliced
  • 1 Onion, sliced
  • 2 Sprigs Rosemary
  • 1 Bulb Garlic, sliced at the top
  • Black Pepper, freshly cracked
  • 1/4 cup Olive Oil
  • 4 cups Vegetable Broth
  • 1 cup Heavy Cream

Instructions

  1. Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper.
  2. Place the feta block, red pepper, tomatoes, onion, rosemary and garlic bulb on the prepared sheet pan.
  3. Season everything with black pepper and drizzle with olive oil.
  4. Bake in the preheated oven for 45 minutes or until vegetables are tender and the feta is melty.
  5. Remove the roasted garlic bulb and set aside until cool enough to handle.
  6. In a large soup pot add the roasted vegetables and feta. Carefully squeeze the roasted garlic into the pot and add the vegetable broth.
  7. Use an immersion blender until soup is smooth.
  8. Add heavy cream and simmer on medium heat for 5 minutes.
  9. Serve with grilled cheese for a delicious cozy meal!
