Ingredients
- 1 (8 oz.) Feta block
- 1 Red Pepper, sliced
- 4 Roma Tomatoes, sliced
- 1 Onion, sliced
- 2 Sprigs Rosemary
- 1 Bulb Garlic, sliced at the top
- Black Pepper, freshly cracked
- 1/4 cup Olive Oil
- 4 cups Vegetable Broth
- 1 cup Heavy Cream
Instructions
- Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper.
- Place the feta block, red pepper, tomatoes, onion, rosemary and garlic bulb on the prepared sheet pan.
- Season everything with black pepper and drizzle with olive oil.
- Bake in the preheated oven for 45 minutes or until vegetables are tender and the feta is melty.
- Remove the roasted garlic bulb and set aside until cool enough to handle.
- In a large soup pot add the roasted vegetables and feta. Carefully squeeze the roasted garlic into the pot and add the vegetable broth.
- Use an immersion blender until soup is smooth.
- Add heavy cream and simmer on medium heat for 5 minutes.
- Serve with grilled cheese for a delicious cozy meal!
