Easy, affordable, melt in your mouth shortbread cookies. They come together in no time, and are so light and buttery.

Ingredients

  • 1 1/2 cups Butter, room temperature, salted
  • 3/4 cup Confectioners Sugar
  • 2 1/4 cups All-Purpose Flour
  • 3/4 cup Cornstarch

Instructions

  1. In a large mixing bowl beat butter and confectioners sugar for 2-3 minutes.
  2. Sift flour and cornstarch in the bowl and beat only until combined.
  3. Scoop and roll into 24 equal sized cookie balls and place on pre-lined baking sheet.
  4. Take a fork and dip in cornstarch before pressing the cookies. Add sprinkles.
  5. Refrigerate for about 2 hours or until firm to the touch.
  6. Preheat oven to 300 degrees F.
  7. Bake chilled cookies for 18-20 minutes, or until tops look set.
