This crispy, tasty, so juicy air fryer chicken recipe comes together in less than 30 minutes. Just because it's affordable, doesn't mean it compromises on taste. Eat it as a chicken breast with a side vegetable or put it on a bun and have it as a sandwich. Either way, this recipe is a winner.
Ingredients
- 1 pound Chicken Breasts, filet and cut into cutlets
- Salt and Fresh Ground Pepper, to taste
- 2 large Eggs
- 2 Tbsp Pickle Juice
- 1 Tbsp Mustard, use your favorite mustard
- 1/2 tsp Paprika
- 1/4 tsp Garlic Powder
- 1/4 Onion Powder
- 1/8 Cayenne Pepper
- 1 cup Panko Crumbs
- 1/4 cup All Purpose Flour
- Avocado or Olive Oil Spray
For Serving
- Lettuce
- Hamburger Buns
- Tomatoes
- Pickles
Instructions
- Season the chicken with salt and pepper and set aside.
- In a shallow bowl whisk together the eggs, pickle juice, mustard, paprika, garlic powder, onion powder, and cayenne pepper.
- Place the crumbs in a separate shallow bowl.
- Place the flour in a third shallow bowl.
- Dip one chicken cutlet in the flour, then dip it into the egg mixture, letting excess drip off, and finally coat it in the crumbs, pressing down with your fingers.
- Place the breaded chicken on a plate and continue to do the same process with the rest of the cutlets.
- Coat the air fryer basket with cooking spray. Place 2 chicken cutlets in the air fryer basket and spray the chicken with cooking oil.
- Cook at 400 degrees F for 5 minutes. Flip and lightly spray chicken with cooking spray and continue to cook for 4 to 5 minutes or until cooked through. To check if chicken is done, use an instant-read thermometer. The chicken is done when internal temperature registers at 165 degrees F.
- Remove the chicken from the air fryer basket and transfer it to a plate. Keep covered and while the other chicken cooks.
- Serve in lettuce cups or hamburger buns with tomatoes and pickles.
