Oven Veggie Cheese Pasta

Fresh veggies, cheese, and pasta baked to perfection for the most delicious casserole ever!
Ingredients
- 2 small zucchinis
- 2 Boursin cheese
- 1 yellow pepper
- ½ red onion
- 1 pint cherry tomatoes
- 4 cloves whole garlic
- Drizzle of olive oil
- Salt and pepper to taste
- 1 Tbsp Italian seasoning
- ½ cup unsweetened coconut milk (more if needed)
- ½ cup parmesan cheese
- 8 oz. Pasta
Instructions
- Slice zucchinis into rounds, then cut in half
- Slice a yellow pepper into strips
- Chop half of a small red onion
- Add Veggies to a 9X13 inch baking dish. Move veggies from the center then add the Boursin cheese
- Drizzle a healthy amount of olive oil over all then season with Italian seasoning, salt and pepper
- Bake uncovered in a preheated 350 F. oven for 30-40 minutes
- Remove from oven and stir it all together smashing the garlic and tomatoes. Stir in coconut milk then place back in the oven for 12-15 minutes
- Cook the pasta in salted water until al dente, drain and stir into the cheese/veggie mixture
- Sprinkle with parmesan cheese
- Taste and adjust for seasoning
