Fresh veggies, cheese, and pasta baked to perfection for the most delicious casserole ever!

Ingredients

  • 2 small zucchinis
  • 2 Boursin cheese
  • 1 yellow pepper
  • ½ red onion
  • 1 pint cherry tomatoes
  • 4 cloves whole garlic
  • Drizzle of olive oil
  • Salt and pepper to taste
  • 1 Tbsp Italian seasoning
  • ½ cup unsweetened coconut milk (more if needed)
  • ½ cup parmesan cheese
  • 8 oz. Pasta

Instructions

  1. Slice zucchinis into rounds, then cut in half
  2. Slice a yellow pepper into strips
  3. Chop half of a small red onion
  4. Add Veggies to a 9X13 inch baking dish. Move veggies from the center then add the Boursin cheese
  5. Drizzle a healthy amount of olive oil over all then season with Italian seasoning, salt and pepper
  6. Bake uncovered in a preheated 350 F. oven for 30-40 minutes
  7. Remove from oven and stir it all together smashing the garlic and tomatoes. Stir in coconut milk then place back in the oven for 12-15 minutes
  8. Cook the pasta in salted water until al dente, drain and stir into the cheese/veggie mixture
  9. Sprinkle with parmesan cheese
  10. Taste and adjust for seasoning
