Loads of fresh vegetables, cheese, and a tasty batter that is so easy and quick to put together makes this recipe a keeper.
Ingredients
- 3 Zucchinis, shredded and excess water squeezed out
- 1 Onion, diced
- 3-4 Tbsp Olive Oil
- 1 Carrot, shredded
- 1 Red Pepper, sliced thin
- Parsley, chopped
- 1 tsp Salt
- 1 tsp Pepper
- 1/2 tsp Seasoning Salt
- 1/8 tsp Cayenne
- 3 Eggs
- 1 1/2 cups Milk
- 2 cups Flour
- 2 cups Cheddar Cheese, shredded
Instructions
- Shred zucchini and squeeze excess liquid out and set aside in a separate bowl.
- In a skillet over medium heat, add olive oil and diced onion. Sauté until onion is translucent.
- Shred carrot then add to the skillet with the onion. Sauté for about 2 minutes. Finely slice the red pepper and add to the skillet, season with salt, pepper, seasoning salt and cayenne and cook for another 2-3 minutes stirring frequently. Remove from heat.
- Add the cooked vegetables to the bowl of zucchini and mix well.
- In a bowl, beat egg and milk. Season with salt and pepper. Slowly add the flour and mix until combined. Pour over the cooked vegetables.
- Spray a large baking sheet with non-stick spray and evenly spread the vegetable mixture on the sheet.
- Bake at 400 degrees F. for 30-35 minutes. Remove from oven and top with cheese then bake an additional 8-10 minutes.
- Top with chopped parsley and serve.
