Loads of fresh vegetables, cheese, and a tasty batter that is so easy and quick to put together makes this recipe a keeper.

Ingredients

  • 3 Zucchinis, shredded and excess water squeezed out
  • 1 Onion, diced
  • 3-4 Tbsp Olive Oil
  • 1 Carrot, shredded
  • 1 Red Pepper, sliced thin
  • Parsley, chopped
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1/2 tsp Seasoning Salt
  • 1/8 tsp Cayenne
  • 3 Eggs
  • 1 1/2 cups Milk
  • 2 cups Flour
  • 2 cups Cheddar Cheese, shredded

Instructions

  1. Shred zucchini and squeeze excess liquid out and set aside in a separate bowl.
  2. In a skillet over medium heat, add olive oil and diced onion. Sauté until onion is translucent.
  3. Shred carrot then add to the skillet with the onion. Sauté for about 2 minutes. Finely slice the red pepper and add to the skillet, season with salt, pepper, seasoning salt and cayenne and cook for another 2-3 minutes stirring frequently. Remove from heat.
  4. Add the cooked vegetables to the bowl of zucchini and mix well.
  5. In a bowl, beat egg and milk. Season with salt and pepper. Slowly add the flour and mix until combined. Pour over the cooked vegetables.
  6. Spray a large baking sheet with non-stick spray and evenly spread the vegetable mixture on the sheet.
  7. Bake at 400 degrees F. for 30-35 minutes. Remove from oven and top with cheese then bake an additional 8-10 minutes.
  8. Top with chopped parsley and serve.
