This is one of the best Mexican rice recipes around. So simple but with fresh ingredients, makes it so tasty and affordable.
Ingredients
- 2 cups Jasmine rice, rinsed
- 1 Tbsp Olive Oil
- 1 Tbsp Butter
- 1 White Onion, diced and divided
- 4 cloves Garlic
- 2-3 medium Tomatoes, cut in half
- 1/2 Red Bell Pepper, sliced
- 4 cups Chicken Broth
- 1 1/2 Tbsp Chicken Bouillon
- Black Pepper to taste
- 1/2 tsp Garlic Powder
- Cilantro for garnish
Instructions
- In a large saucepan over medium heat melt butter in olive oil.
- Add 1/4 cup of diced white onion and cook until translucent and soft.
- Add uncooked Jasmine rice and brown about 3 minutes stirring frequently.
- In a blender or food processor, add tomatoes, 1/4 cup of the white onion, garlic, red bell pepper, chicken broth, chicken bouillon, black pepper and garlic powder. Blend until smooth.
- Add the liquid to the rice, bring to a boil, reduce heat to simmer, cover and simmer for 25 minutes. Do not open the lid.
- Garnish with fresh chopped cilantro.
