This is one of the best Mexican rice recipes around. So simple but with fresh ingredients, makes it so tasty and affordable.

Ingredients

  • 2 cups Jasmine rice, rinsed
  • 1 Tbsp Olive Oil
  • 1 Tbsp Butter
  • 1 White Onion, diced and divided
  • 4 cloves Garlic
  • 2-3 medium Tomatoes, cut in half
  • 1/2 Red Bell Pepper, sliced
  • 4 cups Chicken Broth
  • 1 1/2 Tbsp Chicken Bouillon
  • Black Pepper to taste
  • 1/2 tsp Garlic Powder
  • Cilantro for garnish

Instructions

  1. In a large saucepan over medium heat melt butter in olive oil.
  2. Add 1/4 cup of diced white onion and cook until translucent and soft.
  3. Add uncooked Jasmine rice and brown about 3 minutes stirring frequently.
  4. In a blender or food processor, add tomatoes, 1/4 cup of the white onion, garlic, red bell pepper, chicken broth, chicken bouillon, black pepper and garlic powder. Blend until smooth.
  5. Add the liquid to the rice, bring to a boil, reduce heat to simmer, cover and simmer for 25 minutes. Do not open the lid.
  6. Garnish with fresh chopped cilantro.
